This simple family recipe for Arroz con Leche is a perfect warm drink for the holiday season, reminiscent of Las Posadas. Made with authentic Mexican ingredients from Kroger, it’s a comforting and traditional treat.
1. In a large saucepan over medium high heat, add the cinnamon sticks and water. Once it has a soft boil, add the rice. Stir the rice and cook for 15-20 minutes or until the rice is softened.
2. Add in 1 cup of milk, evaporated milk, and sweetened condensed milk. Mix well and reduce the heat to a simmer. Cook for 20-25 minutes or until the mix has thickened. Make sure to stir constantly.
3. Add in the vanilla and if the arroz con leche is too thick, add the other cup of milk.
4. Serve the arroz con leche in a small bowl or mug and top with raisins and/or powdered cinnamon.
