Creamy Chipotle Chicken Meal Prep

1. Boil 3 roma tomatoes, garlic, and 1/2 of the onion until the tomatoes blister.
2. Once cooked, add vegetables to a blender with 3/4 c Greek yogurt, 1/4 c water, chipotle peppers (the more, the more spicier the sauce will be), and 1 tbsp chicken bullion or salt.
3. Once blended, put to the side.
4. Chop chicken in 1 inch cubes and the remainder of the onion.
5. In a greased pan, add the chopped chicken and cook for 4 minutes.
6. Add onion and combine well. Cook for an additional 5 minutes.
7. Add in the sauce and cover. Cook for 10 minutes.
8. Fold in cheese and seasonings to taste. Once the cheese is melted, turn off the heat.
9. Serve with side of choice. Every meal gets 1.5 c chicken mixture and .75 c beans.
