Ensalada de Camarón shrimp

1. Add water to a pot with the salt, pepper, lime juice, limes, bay leaves, and garlic cloves.
2. Once the water comes to a boil, add the shrimp and cook for 2-3 minutes.
3. Once cooked, add to an ice bath. Optional: slice the shrimp into bite size pieces.
4. While the shrimp cools down, chop the onion, bell peppers, and cucumber into bite size pieces.
5. Add the shrimp, vegetables, and light mayonnaise to a big bowl and combine well.
6. Serve with Milton’s Olive Oil & Sea Salt Gluten Free Crackers. I recommend Olive Oil & Sea Salt but there are 6 delicious flavors!
