Morisqueta is a hearty and delicious Mexican dish that originates from Michoacán, Mexico. This budget-friendly meal features pork ribs cooked in a rich, spicy salsa, served layered with white rice and mashed pinto beans.
1. Chop the pork ribs into 1 inch pieces.
2. Fill a pot with water and add the pork ribs with 1/4 white onion, 2 garlic cloves, and salt. Cook the pork until all the water has dried out (40-60 minutes). Once the water has dried out, stir the ribs for 5-10 minutes or until it is golden brown.
3. While the ribs are cooking, cook the white rice and beans according to the package.
4. Roast the tomatoes, chiles, 3 garlic cloves, and 1/4 onion on a comal until charred.
5. Add the roasted vegetables to a blender with 1/2 cup of water and chicken bouillon to taste. Blend until smooth.
6. Add the salsa to the golden brown pork ribs and simmer on low heat for 10 minutes. Optionally, you can strain the salsa if you would like before putting it into the pot with pork.
7. Add 1 tablespoon of lard to a separate pan and fry a couple pieces of onion add the cooked beans. Add as much bean broth as you’d like, depending on how thin you like them (I add 1/2 cup). Mash them until you have your desired consistency.
8. To plate your morisqueta, start with a layer of white rice then beans and finish with your pork guisado.
