This no cook recipe is full of fiber, protein, and volume making this a delicious and healthier option for family beach days, bbq’s, or as a no reheat meal prep option. This requires under 20 minutes of prep time but packs so much flavor!
1. Chop the vegetables, cilantro, and chicken into bite size pieces. You may also shred the chicken.
2. Drain the canned corn and beans.
3. Mix the greek yogurt, light mayo, juice of the lime(s), chipotles en adobo along with your seasonings of choice (what I added is in the ingredient list).
4. Add the chopped vegetables to a bowl with the chicken, beans, corn, cilantro, and chipotle crema. Mix well. Let it sit in the fridge for a minimum of 30 minutes.
5. Enjoy over tostadas, in a wrap, by itself, or with protein chips. Add avocado or salsa.
